Ingredients: 2 lbs. ground beef (I prefer leaner beef) 1 15 oz. can green enchilada sauce 1 can chopped green chiles 1.5 pkg. taco seasoning (Slap Your Mama seasoning works great too) 2 15 oz. cans refried beans 1 can Ro-Tel tomatoes

Directions: 1. Brown ground meat. 2. Combine the browned ground meat, enchilada sauce, green chiles, taco seasoning (add the amount of water specified on the taco seasoning packet too), refried beans, and the Ro-Tel in a large pot. 3. Set burner to medium heat or medium flame. 4. Stir until well blended. 5. Simmer until well heated, approx. 15-20 minutes. Use your own judgement. 6. Be sure to stir occasionally. 7. Spoon onto a tortilla. Add toppings of choice (cheese, lettuce, chopped olives, etc.). You can also serve over corn chips.
